Elaine Primeaux gave me this recipe in 1998
Ingredients:
1 box Jiffy cornbread mix
1/2 cup cottage cheese
2 eggs
1 cup chopped fresh broccoli florets
1/2 cup shredded cheddar cheese
1/2 medium onion chopped
Melt 3/4 stick butter in baking dish
Pour in batter and bake 375 degrees for 25-35
If you want a thicker end result, use a smaller pan and adjust the cooking time. For this batch, I used a 9x13 cake pan. I have used a 8x8, it just takes a longer bake time.
